BOUJEE BERRY CRUMPETS
Ingredients
For the Berry Compote:
• 1 cup fresh blueberries
• 2 tablespoons maple syrup
• 1 tablespoon fresh lemon juice
• 1 tablespoon water
• ¼ teaspoon vanilla extract
For the Crumpets:
• 3 crumpets
• butter (for spreading)
• honey (for spreading)
For Serving:
• ⅓ cup dollop cream
• honey (for drizzling)
Method
1. Make the Berry Compote:
• In a small saucepan, combine blueberries, maple syrup, lemon juice, water and vanilla extract.
• Simmer over medium heat for 14 minutes, stirring occasionally.
• Remove from the heat and allow the mixture to thicken as it cools.
2. Prepare the Crumpets:
• Toast the crumpets until golden.
• Spread butter and honey over the warm crumpets.
3. Assemble & Serve:
• Place a dollop of cream on each crumpet.
• Spoon the berry compote over the cream.
• Drizzle with honey
