PESTO EGGS BREAKFAST BAGEL
Ingredients:
• 1 bagel, halved
• 4 slices of provolone cheese
• ½ tablespoon butter
• 1 tablespoon pesto
• 2 eggs
• ½ avocado, sliced
• 4 slices of prosciutto
Instructions:
1. Add the Cheese:
Place all four slices of provolone cheese inside the bagel, between the two halves.
2. Toast the Bagel:
Heat a pan over medium heat and add ½ tablespoon of butter. Place the bagel in the pan and cover with a lid. Cook for 2 minutes to begin melting the cheese.
3. Start the Eggs:
After 2 minutes, move the bagel to the side of the pan. Add the pesto to the other side, then crack the eggs directly over the pesto.
4. Cover & Cook:
Put the lid back on and let everything cook for another 1 minute.
5. Flip & Finish:
Flip the bagel and continue cooking until the egg whites are set, the yolks are done to your liking, and the cheese inside the bagel is fully melted.
6. Assemble:
Open the toasted bagel, layer with sliced avocado, pesto eggs, and prosciutto. Close the bagel and serve immediately.
